After a few weeks of proper spring weather with lots of sunny days, we’re expecting a dreary and rainy weekend in Edinburgh. In other words, the standard Scottish weather. That means we’re likely to spend pretty much the entire weekend inside, but it’s not too bad since by Monday the days are due to be warm and sunny again and it’ll be the perfect weather for long and relaxing walks around our neighborhood.
This weekend I’m planning on making Beef Stroganoff, which is a favorite comfort food of both my husband and mine, and goes well with unpleasant weather. It just warms you from the inside out. At this point I’ve made it so many times that I don’t need a recipe, but this take on the classic dish via Gimme Some Oven is a great start for anyone who wants to try making it at home.
I personally add more onions and a few splashes of Red Boat Fish Sauce to add extra umami. It doesn’t taste “fishy” but really goes a long way in adding extra depth to the savory flavors.
